F&B Outlet Daily Log Book

Purpose:    :  To record all daily information on the operation of each Outlet within F&B

Procedure:

.    Every outlet must have a logbook, a new logbook is to be ordered before the old one is full.
   
.    The logbook must contain the following information, however not limited to;
-    Daily revenue per meal period against budget.
-    Daily covers per meal period
-    Ave. Check
-    Guest feedback
-    Staffing levels
-    Special dishes; daily special, etc.
-    Problems area’s and manager/supervisor comments
-    Local/non-local & resident/non-resident statistics

.    It is the Outlet Manager’s responsibility to ensure that the Daily Log is filled in correctly and accurately.

.    In the absence of the Outlet Manager, the Outlet supervisors are responsible to ensure that the Daily log is filled out correctly and accurately.

.    Budget and manning guide information for each month should be obtained from the Director of F&B

.    The daily log should be completed at the close of business each day, and is to be taken to Room Service for collection.

.    The daily logs will then be taken to the F&B secretary by a member of the Room Service Staff at 08:00 Hrs the following day.

.    The daily logs will then be reviewed and returned to all Outlets at the daily F&B Morning briefing.
